Einstein said: Everything Should Be Made as Simple as Possible, But Not Simpler.
The key to mindful eating is to eat simple food that is plentiful in nutrients.
Even if you are not into salads I am offering you a recipe that tastes so great that might as well appeal to all tastes!
What you need:
Produce: Kale, chard, zucchini, tomatoes, bell pepper, parsley
Dressing : Dries strawberries (cranberries/cranberry juice also work), clove, cumin, coriander, curry, basil
Extras: Rice vinegar, pumpkin seeds and fresh lemon juice
Cut and place the veggies into a bowl and squeeze one lemon on top so that the kale leaves get soften. Do not throw the ends of the chard but blend them with some parsley (if you don`t like the taste of it cilantro is another option, or vice versa) and a spoon of pumpkin seeds. Pour the pesto-looking sauce on top of your greens and savor the dish with some vinegar or, if you like, more fresh lemon juice instead.
Mix well so that the veggies soak into the dressing better!
