Vibrant beet salad: nutritious and filling

If you want a low in calories and yet dense in vitamins and minerals meal, go for this recipe:

Blend beets and carrots together (adding mustard and miso paste for taste) and serve with chopped broccoli and zucchini. 

A nice zest is fresh lemon juice on top or balsamic vinegar.
