MANGO Tribute – “The king of the fruits”

Mango is one of my ultimate favourites when it comes down to prepping creamy, rich and filling salad dressings. Mango fruit is rich in pre-biotic dietary fiber, vitamins, minerals, and poly-phenolic flavonoid antioxidant compounds, tastes sweet and delicious and is a great compliment to a fruit salad as well.

 

Dressing recipe:

Blend together a quarter to a one whole mango, one small tomato, fresh dill (a bunch), celery sticks, a piece of ginger, the juice of 1, 2 limes and a dash of turmeric and grounded mustard.

Serve on top of your raw pasta (instructions how to do it here) and enjoy!

Fruit Salad:

Place half of a package of arugula in a bowl and add chopped apples, oranges and mango chunks with a lime juice on top. If you like the taste, you can also  cut fresh cilantro for an extra savoury flavour –  in my opinion, it compliments fruit excellently.
